Introduction

Production kitchens need more than just speed – they need consistency, safety, and chefs who care about quality. The Level 2 Production Chef Apprenticeship is built for high-volume environments like schools, care homes, hospitals, the Armed Forces and casual dining.

Apprentices learn how to work to standardised menus, follow organisational procedures, prepare and regenerate food safely, and use kitchen tools effectively. With a focus on accuracy, hygiene and teamwork, this programme builds confidence in the kitchen while developing future talent for senior chef roles.

Delivered on the job and supported by experienced coaches, this programme is ideal for developing your culinary workforce – from new hires to team members ready to formalise their skills.

  • Observation with Questions – Assessor observes day-to-day kitchen work for up to 2 hours
  • Professional Discussion – 60-minute reflective conversation supported by a submitted portfolio
  • Multiple-Choice Test – 40-question online exam (60 mins)

This Level 2 apprenticeship is the perfect way to build your confidence and skills in a busy, fast-paced food environment. Whether you’re working in a school, care home, hospital or casual dining restaurant, this programme helps you prepare food safely, follow set recipes and become a valued member of the kitchen team.

You’ll learn how to prepare, cook and present food, follow hygiene rules, use kitchen tools correctly and manage your own workstation. With support from a coach and your employer, you’ll gain the experience and knowledge you need to succeed in a kitchen environment – and take the next step in your chef career.
