A Fishmonger apprentice will develop their capability, knowledge and skills in relation to the craft of Fishmongering, covering a broad range of fish and shellfish species. Whilst developing new knowledge and skills, the apprentice will learn knife and filleting techniques including scaling, skinning, gutting, boning, pocketing, canoeing, shucking and steaking that will enable the preparation and presentation of fish and shellfish in order to provide customers with the expected quality and quantity. 

The apprentice will develop behaviours and broaden their seafood industry knowledge which will enhance their confidence and abilities whilst working within the seafood sector. 

The apprentice will be able to carry out a number of activities within the seafood sector using a range of best practice methods including the safe and hygienic handling of fish, health and safety practices, the following of standard operating procedures (SOP) along with learning ways of interpreting the customer’s needs and enabling them to advise and up-sell in relation to portions, presentation and cooking techniques, in order to meet your customer requirements.

Assessment

The apprentice will be assessed against specific criteria, the assessment process will take a synoptic approach, encompassing the apprentice’s overall performance whilst carrying out activities within a food manufacturing environment. 

The assessment will be carried out by an independent end point assessor; using methods including knowledge questions, workplace/practical observations and professional discussions. 

Once a minimum of a pass has been achieved for each element, a grade will be determined by the end point assessor based on a combination of the apprentice’s performance during all aspects of the assessment process.
