A Butchery apprentice will develop their capability, knowledge and skills in relation to the craft of butchery, enabling them to use techniques in order to achieve the best quality and most economical way to produce the required cuts/yield from a carcass. They will achieve this through mastering a number of different knife skills in addition to the ability to use a range of different butchery equipment.
A Butchery apprentice will achieve a level 2 food safety award and better understand health and safety requirements within the butchery supply chain as well as developing their understanding of core elements of the sector.
The Butchery apprenticeship is developed to support differing butchery environments including retail, in-store and processing plant, and the chosen pathway will determine the specific subject matter.

The apprentice will be assessed against specific criteria, the assessment process will take a synoptic approach, encompassing the apprentice’s overall performance whilst carrying out activities within a butchery environment.
The assessment will be carried out by an independent End Point Assessor; using methods including knowledge questions, butchery practical observations and vocational discussions including a review of evidence collected during the apprenticeship.
Once a minimum of a pass has been achieved for each element, a grade will be determined by the end point assessor based on a combination of the apprentice’s performance during all aspects of the assessment process.
