A Bakery apprentice will learn how to make a wide range of breads and baked goods using both traditional craft and more modern methods. They will learn the history of bread and pastry making as well as developing their knowledge, skills and behaviours in relation to working efficiently and confidently within a bakery environment. These disciplines will include a greater understanding of ingredients, equipment, processes, timings and bakery techniques. This will enable the apprentice to produce products to the required specifications in order to meet the customer’s demands in relation to both quality and quantity. 

Once the successful achievement of the level 2 Bakery standard has been attained, the apprentice may wish to further develop their horizons through additional educational opportunities or working towards a leadership/specialism role within the bakery sector.

The apprentice will be assessed against specific criteria and the assessment process will take a synoptic approach, encompassing the apprentice’s overall performance whilst carrying out activities within the bakery environment. 

The assessment will be carried out by an independent end point assessor; using methods including multiple choice questions, practical skills assessment, workplace observations and professional discussions. 

Once a minimum of a pass has been achieved for each element, a grade will be determined by the independent end point assessor and they will produce an overall grade based on a combination the apprentice’s performance during all aspects of the assessment process.
